Celebrate Waffle Day with Hilda Kirkhoff’s Crispy Waffles

On March 25th, we celebrate Waffle Day across the Nordics—and of course, at every Home Hotel! This year, we are celebrating alongside Hilda Kirkhoff and her crispy waffles, flavored with hints of lemon and vanilla. These are served with a side of raspberry and cardamom jam. Enjoy the waffles at a Home Hotel or make them yourself at home—you can find the recipes further down.

Hilda’s Best Crispy Waffles with Lemon and Vanilla

Recipe for approx. 10 waffles


Ingredients:


  • 100 g butter, melted
  • 2,5 dl water, cold
  • 2 dl milk
  • 3,5 dl wheat flour
  • 2 tsk baking powder
  • 2 msk granulated sugar
  • 0,5 tsk salt
  • 1 lemon, zest
  • 1 tsk vanilla sugar

Instructions:


  1. Melt the butter—feel free to brown it slightly for extra flavor—and let it cool.
  2. Measure all the ingredients and whisk into a smooth batter.
  3. Pour in the butter and stir a little more.
  4. If desired, add your choice of additional flavoring.
  5. Bake the batter in a waffle iron until the waffles are golden brown.
  6. To keep the waffles crispy, do not stack them on top of each other. This creates moisture and the crispiness disappears. Instead, place them on a cooling rack.
  7. Serve with the raspberry jam (recipe below) and lightly whipped cream.

Raspberry Jam with Cardamom

Ingredients:


  • 500 g raspberries (fresh or frozen, either works)
  • 300 g jam sugar (syltsocker)
  • 1 msk lemon juice
  • 1 ½ tsk freshly ground cardamom

Instructions:


  1. Place the raspberries in a heavy-bottomed saucepan. If using frozen raspberries, there is no need to thaw them first.
  2. Add the jam sugar and lemon juice.
  3. Bring to a boil while stirring. Lightly mash the raspberries with a spoon.
  4. Let it simmer over medium heat for about 8 to 10 minutes. Skim off any foam if necessary.
  5. Remove the saucepan from the heat and stir in the freshly ground cardamom.
  6. Pour the jam into clean, warm jars and seal with lids immediately.
  7. Allow to cool. Store in a cool place; once opened, keep the jar in the refrigerator.
