Hilda Kirkhoff’s apple cake recipe

Apple Day is celebrated on 25 September – and what better way to mark the occasion than with a delicious apple cake? Hilda Kirkhoff shares her recipe for a moist apple cake filled with the flavours of autumn. Perfect for baking, sharing and enjoying when apples are at their best. On the same day, all Home Hotels in Sweden will be serving Hilda’s apple cake as part of their afternoon fika.

Hilda’s Apple Cake

Makes approx. 20 bites. Adjust the quantities based on your needs.


Batter
3 eggs
2 dl caster sugar
1½ dl light brown sugar
6 dl plain flour
2 tsp baking powder
1 tsp vanilla sugar
1 pinch salt
300 g butter
3 dl rolled oats


Cinnamon apples
3 apples
2 tsp ground cinnamon


Topping
Light brown sugar or pearl sugar
Freshly ground cardamom

Instructions:


  1. Preheat the oven to 200°C top and bottom heat. Line a baking tray, approx. 30 × 25 cm, with parchment paper.
  2. Melt the butter and remove the pan from the heat. Stir in the oats and let the mixture swell while you prepare the rest.
  3. Peel the apples and cut them into slices about 0.5 cm thick. Toss them with the cinnamon.
  4. Whisk the eggs, caster sugar, and light brown sugar until pale and fluffy.
  5. Mix the flour, baking powder, vanilla sugar, and salt in a separate bowl. Fold the dry ingredients into the egg mixture.
  6. Add the butter and oat mixture and stir until you have a smooth batter. The batter will be fairly thick.
  7. Spread the batter evenly in the tray and press the cinnamon-coated apple slices into it.
  8. Sprinkle with light brown sugar or pearl sugar and finish with plenty of freshly ground cardamom.
  9. Bake on the second-lowest rack in the oven for about 30 minutes, or until the cake has a nice colour and feels baked through.
  10. Let the cake cool before cutting it into squares.
  11. Serve with lightly whipped cream or vanilla custard, if you like.
